Plastic cutting boards are made of non-porous material that makes them safer for food preparation. However, there are some situations when you many want to sanitize your plastic cutting board

Use one of these methods to naturally disinfect a plastic cutting board:

  • Run the cutting board through the dishwasher on the hottest setting. The heating element in the dishwasher heats the water above the temperature your skin can tolerate, killing more bacteria.
  • Wash the cutting board with soap and water then wipe or spray the cutting board with white vinegar. Next wipe or spray the cutting board with hydrogen peroxide. Rinse clean. This one-two punch will naturally kill bacteria lingering on the cutting board. It works as well as bleach.
  • Skip the bleach and store-bought cleaners for cutting board stains and try hydrogen peroxide. Its an easy, green way to remove stains and keep your cutting boards looking great!

    Wooden Cutting Board Turns Black

My wooden cutting board is turning black!

I tried reposition the cutting board and even tried hanging them but regardless of the different configuration, water still accumulate at a certain region during the drying process and blacken them. After the cutting board is dried, the black remains and is not fading away.

How to avoid it and how can I get rid of the black-ness?

The black spots can be one of several things, but are likely a variety of mold. Black stains can also be caused by a reaction to the iron in your knives . If it is mold, it is growing because even though the surface of your cutting board is dry, moisture has soaked in, probably because it needs to be oiled or waxed.

To recondition a butcher block or cutting board that is stained or gouged, you can sand the surface down, and reoil.

  • Use a sanding block to keep the surface from getting wavy as you sand.
  • Start sanding with 120 grit , and sand evenly, moving with the grain, until the stains are gone, or almost gone .
  • Repeat the sanding with 240, then 400 grit until the roughness from the previous sanding is gone.
  • Reoil with any Butcher Block Conditioner. There are many out there, and they are either food-safe mineral oil, or that oil with a few other waxes mixed in. Many are good, but my favorite is Howard’s Butcher Block Conditioner. Follow the instructions, but it will amount to making a liberal application, allowing it to sit for a while, then wiping off the excess.

After many years of use, your wood cutting board may become scarred, gouged, or stained with water spots on the surface. To smooth the surface and/or remove stubborn stains, it needs to be sanded.

Youll need to do several rounds of sanding, starting with a coarser-grit sandpaper and gradually working toward a finer-grit one. If your board has really deep gouges, you may want to start with 80-grit sandpaper and work your way up. Finishing with 220-grit sandpaper is probably sufficient in most cases, but theres no harm in continuing on to finer grits, like 320 or 400, if you feel so inclined. Cox said that finer-grit sandpaper creates smaller and smaller gouges into the board, which make it tougher and tougher for smaller particles to embed themselves into the board on a micro level.

Cut the sandpaper to fit around a small, flat box , a sanding block, or an electric orbital sander . Sand the board in the direction of the grain . Once the sandpaper becomes clogged or worn down, switch to a new piece.

Brush away any dust, and look at the board in the light, from a low angle. If you see any unevenness or inconsistencies, keep sanding with the same grit until the board looks even. Be sure to remove the boards deep gouges with the coarsest grit first, before moving on to finer grits.

Proceed in the same way for each subsequent grit. Cox recommends sanding both sides of your board so that each surface receives equal treatment and will be less prone to warping.
